I've been Vegetarian for Two Years?! Recipe Share!


It's true! Yesterday marked two years of vegetarianism for me. Wow, the time has really flown by. I have tried so many new foods and eat so much healthier now (which really is a separate act of it's own, you can be an junk-food veggie).
I figured I would share two of my all-time favorite, go-to meals. I'm not trying to be pushy and try to "convert" you, I'd just thought I'd share. My super carnivorous father even likes these- so give them a shot! And excuse my bad directions- I'm no chef.

Falafel Gyro:

Whenever I want something super filling and delicious but don't want to spend to much time- this is it. And Falafel is just the best. Throw frozen Falafel in the oven or even the microwave and take a few minutes mixing the sauce together and presto!

-Take Greek Flatbread
-Spread Hummus (my favorite is the Mediterranean from Trader Joes)
-Crumble up prepared falafel (the frozen ones at Trader Joes...yum)
-Top with Cucumber Sauce (here's one recipe)
-Finish it off with lettuce and tomato and onion *yuck* if you like.
-Take a fork and knife- trust me you'll need them- and devour.

Cheeseburger Quesadillas:

I stole this idea from The View. Really. They were suggesting it because it's healthier than a cheeseburger because it has less cholesterol. I don't miss "real meat" cheeseburgers or quesadillas one bit.

-Cook up Boca Burger (I use the Flame Grill Flavor and grill 'em on a skillet)
-Chunk up the Boca Burger to ground beef consistency
-Take Tortilla- Place Boca Burger and Cheese on one half
-Fold Tortilla
-Place on Skillet and grill until cheese is melty and tortilla is crispy to your liking*
 -Dip in Ketchup if desired
*Make sure there's some sort of cooking spray on the skillet

So there you have it. I'm really hungry now...

I'm a vegetarian too, though much more recent, so I'm always on the prowl for new recipes (especially since my family is carnivorous, so if I can find something we can all eat, it's a win). Can't wait to try some of these out!

Ahh I was a vegetarian for about two years, also, but I gave it up last year. But I really want to try it again! Congrats!!

Those quesadillas sound amazing! Hamburger meat is the one thing I crave after become vegetarian. That and chicken fingers...
